Ingredients
For the sauce
- 1/4 cup Greek yogurt
- 1 tablespoon miso paste
- 1 teaspoon fresh ginger, grated
- 1 teaspoon sriracha
- 1 teaspoon rice vinegar
For the sandwich
- 4 slices sourdough bread
- 1 cup cooked chicken, sliced or shredded
- 1/2 cup kimchi, roughly chopped
- 1 avocado, sliced
- 1 cup cheese (cheddar, mozzarella, or a mix)
- 2 tablespoons butter or oil for grilling

Make the sauce.
In a small bowl, mix together Greek yogurt, miso paste, grated ginger, sriracha, and rice vinegar until smooth.

Prep the ingredients.
Slice the avocado, chop the kimchi if needed, and have the chicken ready.

Assemble the sandwiches.
Spread a thin layer of the sauce on the inside of each slice of sourdough. Layer chicken, cheese, kimchi, and avocado on two slices. Top with the remaining bread.

Heat the pan.
Melt butter or heat oil in a skillet over medium heat.

Grill the sandwiches.
Place sandwiches in the pan and cook for 3 to 4 minutes per side, pressing lightly, until the bread is golden and the cheese is melted.

Finish and serve.
Remove from heat, let rest for a minute, then slice and serve warm.
